barbecue / fried lamb chops


Ingredients

ingredients:
 
3 (or more) well-butchered lamb chops
4 coarse chopped cloves of garlic
4" sprig of rosemary; finely chop the top; strip leaves off the rest
olive oil
sea salt
coarse ground black pepper
jar of honey (english or mediterannean mountain honey)
lemon chopped in half
 

Procedure

cooking:
 
in frying pan (indoors or over campfire) or on silver paper under grill
 
- pour 3 tables spoon of olive oil in frying pan at medium heat
- as oil heats up throw in:
 
                               - a good four finger pinch of garlic
                               - " chopped rosemary
                               - " coarse ground black pepper
                               - " three fingered pinch of sea salt
 
- before the garlic turns brown, squeeze in a bit of lemon juice and add chops
- continue to fry, turn chops before they brown
- turn chops again
- turn up heat high
- add rest of chopped garlic and chopped rosemary + salt and pepper to taste
-squeeze in more lemon, to taste
- as chops brown on underside, pour/paste honey on to chops
- squeeze more lemon into pan
- place rosemary leaves on chops......
- take the pan off the heat and serve.........
 
red wine is good with this - spanish rioja or maybe a good medoc if its a special occasion
