Serves: 4 Ingredients 1 cucumber 2 tablespoons green onion, chopped 4 ounces cream cheese, fat-free 2 tablespoons mayonnaise, low-fat 1/4 teaspoon hot pepper sauce 1/4 teaspoon garlic powder 4 slices pumpernickel bread
Preparation - Wash, peel, and chop cucumber into very fine pieces. Mince onion.
- Blend cream cheese with mayonnaise, hot sauce and garlic powder. Add cucumber and onion; mix well.
- Trim crust from bread slices, if desired.
- Spread cucumber mixture evenly on 2 slices of bread; add remaining slices of bread to form sandwiches.
- Cut sandwiches in half diagonally and serve - 2 mini sandwiches per serving.
