Serves: 4 Ingredients 8 ounces shrimp, cooked 1 orange, medium 1 grapefruit 1 fresh avocado 4 pieces lettuce leaves 6 mint leaves
Preparation - Peel and section orange and grapefruit; peel, remove seed, and slice avocado. Toss with shrimp.
- Wash lettuce leaves and dry with paper towels. Line cocktail cups or glasses with lettuce leaves.
- Spoon shrimp mixture over lettuce. Sprinkle with chopped mint to serve.
