Cinnamon-Raisin French Toast

Prep Time: 5 minutes or less
Cook Time: 15 minutes

Serves: 4

Ingredients

  • 3/4 cup liquid-egg substitute
  • 6 fluid ounces milk, fat-free
  • 1 tablespoon sugar substitute
  • 1/2 teaspoon vanilla extract
  • 8 slices raisin cinnamon swirl bread
  • 4 teaspoons margarine, canola-based, trans-fat free
  • 4 tablespoons reduced calorie pancake syrup

    Preparation
    1. Beat egg substitute, milk, sugar substitute and vanilla with a hand beater or wire whisk until smooth; pour into a shallow bowl.
    2. Spray a griddle or non-stick skillet with cooking spray; heat over medium heat.
    3. Dip bread into egg mixture, coating both sides. Cook about 4 minutes one each side or until golden brown.
    4. Cut each piece diagonally and divide among 4 plates (4 halves per plate). Arrange so halves are overlapping eachother.
    5. Top each plate with 1 teaspoon of margarine and drizzle each with 1 tablespoon of syrup. Serve immediately.
