Peanut Butter French Toast
To add a hint of fresh citrus flavor to this breakfast, grate 1 teaspoon of orange peel into the egg batter.

1 cup Egg Beaters

1/4 cup fat-free milk

1 teaspoon vanilla extract

Dash of salt

1 Tbsp butter or margarine

4 slices bread

1/2 cup maple syrup

1/2 cup chunky peanut butter
Combine the Egg Beaters, milk, vanilla extract, and salt. Beat slightly with a fork until blended.

In a medium skillet, melt the butter. Dip the bread slices into egg mixture, coating both sides of each. Fry the bread until golden brown on one side; turn, and fry the other side.

In a small saucepan, blend the maple syrup and peanut butter. Heat and stir until warm, and pour over the French toast.
Makes 4 servings
Per serving: 442 calories, 16 g protein, 53 g carbohydrates, 19 g fat, 5 g saturated fat, 9 g monounsaturated fat, 10 mg cholesterol, 3 g fiber, 456 mg sodium
