Serves: 4 Ingredients 1 apple, medium 2 tablespoons sugar substitute 1/4 teaspoon cinnamon, ground 4 fluid ounces milk, fat-free 1/2 cup liquid-egg substitute 1/4 cup flour, whole wheat 1/4 cup flour, all-purpose 1 tablespoon margarine, canola-based, trans-fat free
Preparation - Preheat oven to 400°F.
- Lightly spray the sides and bottom of a 9-inch round cake pan. Set aside.
- Peel, remove core, and slice apple thinly. Place in a small bowl and add sugar substitute and cinnamon; mix lightly. Spread evenly in cake pan.
- With an electric mixer, beat egg substitute and milk until blended.
- With mixer on low speed, add flours 1 tablespoon at a time until all is mixed in.
- Pour batter over apple slices and top with margarine cut into little pieces.
- Bake for 25 minutes. Serve warm for best flavor.
