Baked Apple Pancake

Prep Time: 10 minutes
Cook Time: 25 minutes

Serves: 4

Ingredients

  • 1 apple, medium
  • 2 tablespoons sugar substitute
  • 1/4 teaspoon cinnamon, ground
  • 4 fluid ounces milk, fat-free
  • 1/2 cup liquid-egg substitute
  • 1/4 cup flour, whole wheat
  • 1/4 cup flour, all-purpose
  • 1 tablespoon margarine, canola-based, trans-fat free

    Preparation
    1. Preheat oven to 400°F.
    2. Lightly spray the sides and bottom of a 9-inch round cake pan. Set aside.
    3. Peel, remove core, and slice apple thinly. Place in a small bowl and add sugar substitute and cinnamon; mix lightly. Spread evenly in cake pan.
    4. With an electric mixer, beat egg substitute and milk until blended.
    5. With mixer on low speed, add flours 1 tablespoon at a time until all is mixed in.
    6. Pour batter over apple slices and top with margarine cut into little pieces.
    7. Bake for 25 minutes. Serve warm for best flavor.
