Grilled Portobello and Canadian Bacon Omelet Makes 2 servings

This egg white omelet gets a lot of flavor from mushrooms, green onions and Canadian bacon.
8 egg whites
1 cup sliced green onions
Salt and freshly ground black pepper
2 teaspoons olive oil
1/2 pound sliced portobello mushrooms
8 ounces lean Canadian bacon, diced
Preheat broiler. In a small mixing bowl, combine the egg whites and green onions and season with salt and pepper. In a medium nonstick ovenproof skillet over medium-high heat, add the oil. Add the mushrooms and cook for 1 minute. Add the Canadian bacon and sauté for 2 minutes. Pour in the egg mixture and cook, without stirring, for 2 minutes. Place under the broiler for 3 to 5 minutes, or until just cooked. Cut the omelet in half, slide out of the skillet and serve.
