Cream Cheese and Chive Omelet
2 teaspoons unsalted butter

2 tablespoons cream cheese -- softened, cubed
freshly ground black pepper

Place the butter in a 9 in glass pie plate. Microwave on high for 1 minute until melted. roate the plate to coat with butter and set aside. In a medium bowl, whisk together the eggs, milk, chives, and salt. Pour into prepared pie plate. Microwave on high for 3-4 minutes, vently pusing the eggs from the edges to the center several times, until the eggs are just set but still moist and creamy. Place the cheese over the top.
