Asparagus & Ham Quiche Ingredients:
3/4 pound fresh asparagus, cut into 2-inch pieces
1 unbaked pastry shell (9-inch)
1/2 cup fully cooked, cubed ham
1 cup (4 ounces) shredded Swiss cheese
1 tablespoon all-purpose flour
3 eggs, beaten
1 1/2 cups light cream (half & half)
1/2 teaspoon salt
2 tablespoons grated Parmesan cheese
Steam asparagus until crisp-tender; drain well.
Put cooked asparagus over bottom of pastry shell.
Add cubed ham.
Mix the Swiss cheese and flour together, and sprinkle over ham.
Combine eggs, cream, and salt. Mix well then pour over pastry.
Sprinkle with Parmesan cheese.
Bake at 350 degrees for 35-40 minutes, or when a knife inserted in the middle comes out clean.
Let stand for 5 to 10 minutes before serving.
Serves 6.
