This recipe is easy to cut in half!
Omelette Egg Casserole
24 eggs
2 cups sour cream
1 cup melted margarine
2 cups chopped tomatoes
1 green bell pepper, chopped
1 small onion, chopped
2 pounds ham, chopped
2 pounds American cheese, shredded
Beat eggs in mixer bowl until lemon colored. Add sour cream and margarine. Beat at medium speed for two minutes or until smooth.
Stir in drained tomatoes, green pepper, onion, ham and cheese. Spoon into two greased 9x13" baking pans. Bake at 325º for one hour.
