Serves: 4 Ingredients 4 slices bread, whole wheat 4 peach halves, canned in juice 4 tablespoons pecans, chopped 4 fluid ounces milk, fat-free 1/2 cup liquid-egg substitute 1/4 cup sugar substitute 1/2 teaspoon vanilla extract 1/4 teaspoon cinnamon, ground 1/4 teaspoon cloves, ground 1/4 teaspoon nutmeg, ground 1/4 teaspoon ginger, ground
Preparation - Preheat oven to 350°F. Lightly coat an 8-inch square baking pan with cooking spray.
- Cut bread slices into 1/2-inch cubes. Drain peach halves and chop into 1/2-inch pieces.
- Toss bread cubes, peaches and pecans together in the baking dish.
- Whisk milk, egg substitute, sugar substitute, vanilla and spices in a medium bowl. Pour over bread mixture; allow the mixture to soak for about 5 minutes (or longer, if making ahead).
- Bake the pudding for 35 minutes or until set and a knife inserted in the center comes out clean.
- Serve warm for best flavor.
