Serves: 1 Ingredients 1/4 teaspoon olive oil 1/2 cup spinach, fresh, chopped 1/8 cup red onions, chopped 1/4 cup nonfat egg substitute or 2 egg whites 1/8 teaspoon black pepper, to taste 1/4 teaspoon dried oregano
Preparation - Heat oil in small saucepan and saute onions and spinach briefly.
- Add egg substitute or egg whites and cover in medium to low heat until it is all cooked.
- Turn it over gently, or just cook in low heat until it is cooked through. Add black pepper and/or oregano to taste.
