Preparation - Please note that the uncooked amount and cooking time of rice may vary depending on what variety of rice is used, i.e., minute-rice to long-cooking rice.
- This is a wonderful way to use leftover cooked rice, which would decrease the cooking time to zero! If using leftover cooked rice, use 2 cups.
- Otherwise, prepare rice with water according to package directions, aiming for a yield of 2 cups cooked.
- Drain and measure out pineapple and mandarin oranges, reserving juice for another use.
- Wash grapes and cut in half, if desired.
- Combine all ingredients together (including cooked rice) and mix gently. Serve now or later.
- This dish may be covered and chilled in the refrigerator for up to 2 days.
