Fruit and Nut Breakfast Rice

Prep Time: 10 minutes
Cook Time: 15 minutes

Serves: 8
Serving Size: 1/2 cup

Ingredients

  • 1 dry cup rice, brown, cooked
  • 1 dry cup pineapple chunks, canned in juice
  • 1 dry cup mandarin oranges, canned in juice, drained
  • 1 dry cup fresh grapes (any color)
  • 2/3 cup pecans, chopped
  • 1/4 cup cereal, dry oat bran
  • 1/4 dry cup raisins
  • 8 ounces yogurt, fat-free, favorite flavor
  • 1/8 teaspoon cinnamon, ground
  • 1/8 teaspoon nutmeg, ground

    Preparation
    1. Please note that the uncooked amount and cooking time of rice may vary depending on what variety of rice is used, i.e., minute-rice to long-cooking rice.
    2. This is a wonderful way to use leftover cooked rice, which would decrease the cooking time to zero! If using leftover cooked rice, use 2 cups.
    3. Otherwise, prepare rice with water according to package directions, aiming for a yield of 2 cups cooked.
    4. Drain and measure out pineapple and mandarin oranges, reserving juice for another use.
    5. Wash grapes and cut in half, if desired.
    6. Combine all ingredients together (including cooked rice) and mix gently. Serve now or later.
    7. This dish may be covered and chilled in the refrigerator for up to 2 days.
