Shepherd's Pie
Mix:
2 # lean ground beef
1 can cream of chicken soup
2 eggs
1/2 cup bread crumbs
1/4 tsp. salt
dash of pepper
Put in a 9 x 13 pan and bake 350 degrees for 25 mins. Drain off the fat then cover with a 15 oz can of creamed corn. Top with hot mashed potato then cover the top of the potato with another can of cream of chicken soup. Season. Bake 20-25 mins more.
*** This is also delicious topped with cooked rice instead of mashed potato.
