ROUND STEAK WITH MUSHROOMS
(Yield: 4 servings)
1-1/2 tablespoons olive oil
4 ounces mushrooms, sliced
2 green onions, sliced
1-1/2 tablespoons olive oil
1/2 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1-1/2 pounds round steak, cut in serving size pieces
1 cup beef broth
1/4 cup red wine
Preheat oven to 325°F.
In a large skillet, heat 1-1/2 tablespoons oil; add mushrooms and green onions, cooking until just soft.
In a Dutch oven, heat remaining oil.
In a shallow pie plate, combine flour, salt, and pepper. Dredge meat in flour mixutre. Place in Dutch oven and brown on both sides. Add broth and wine; top with mushrooms and green onions. Cover.
Bake for 90 minutes or until meat is very tender.
