Autumn Pasta Salad

Prep Time: 15 minutes
Cook Time: 15 minutes

Serves: 4

Ingredients

  • 2 cups cooked macaroni noodles
  • 1 cup cooked sweet potato cubes
  • 1 apple with skin, chopped
  • 1/2 cup celery, sliced
  • 1/4 cup diced red onion
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon olive oil
  • 2 tablespoons flavored rice vinegar
  • 1/4 teaspoon black pepper, to taste

    Preparation
    1. Toss all ingredients together in a medium mixing bowl; serve warm.
