Asian Chicken Vegetable Salad

Prep Time: 5 minutes or less
Cook Time: 10 minutes

Serves: 4

Ingredients

  • 1 pound frozen stir-fry vegetables
  • 2 tablespoons light soy sauce
  • 1 tablespoon sesame oil
  • 1 cup cooked chicken breast, skinless, cubed
  • 8 cups ready-to-serve spinach leaves
  • 3 tablespoons red wine vinegar

    Preparation
    1. Lightly spray a large non-stick skillet with cooking spray and heat over medium high heat.
    2. Saute the vegetables until crisp-tender and heated through, about 5 minutes. Stir in the soy sauce, sesame oil and chicken. Continue cooking, stirring, until heated through.
    3. Toss the stir-fry mixture with the raw spinach. Drizzle with vinegar before serving.
