Serves: 4 Ingredients 1 cup rice, brown, cooked 1 pound beef sirloin steak, raw 16 fluid ounces beef broth, low sodium 3 tablespoons cornstarch 1 tablespoon soy sauce, reduced sodium 2 garlic cloves 1 onion, yellow 1 bell pepper, red, medium 1 bell pepper, green, medium 1 bell pepper, yellow, whole 1 tablespoon sesame oil
Preparation - Prepare rice according to package directions; keep warm.
- Meanwhile, prepare stir-fry. Slice steak across the grain into thin strips; set aside.
- Mix together broth, cornstarch and soy sauce in a medium bowl; set aside.
- Wash vegetables. Mince garlic; cut (peeled) onion into wedges; and cut bell peppers into thin strips, removing core and inner membrane.
- Heat oil in a large non-stick skillet or wok. Add garlic and vegetables and stir-fry for 2 to 3 minutes.
- Add beef to skillet and cook 2 minutes more or until done. Re-stir the broth and add to skillet. Stir until thick and bubbly.
- Serve stir-fry over cooked rice. Enjoy frozen yogurt for dessert, if desired.
