Beef and Pepper Stir-Fry

Prep Time: 15 minutes
Cook Time: 10 minutes

Serves: 4

Ingredients

  • 1 cup rice, brown, cooked
  • 1 pound beef sirloin steak, raw
  • 16 fluid ounces beef broth, low sodium
  • 3 tablespoons cornstarch
  • 1 tablespoon soy sauce, reduced sodium
  • 2 garlic cloves
  • 1 onion, yellow
  • 1 bell pepper, red, medium
  • 1 bell pepper, green, medium
  • 1 bell pepper, yellow, whole
  • 1 tablespoon sesame oil

    Preparation
    1. Prepare rice according to package directions; keep warm.
    2. Meanwhile, prepare stir-fry. Slice steak across the grain into thin strips; set aside.
    3. Mix together broth, cornstarch and soy sauce in a medium bowl; set aside.
    4. Wash vegetables. Mince garlic; cut (peeled) onion into wedges; and cut bell peppers into thin strips, removing core and inner membrane.
    5. Heat oil in a large non-stick skillet or wok. Add garlic and vegetables and stir-fry for 2 to 3 minutes.
    6. Add beef to skillet and cook 2 minutes more or until done. Re-stir the broth and add to skillet. Stir until thick and bubbly.
    7. Serve stir-fry over cooked rice. Enjoy frozen yogurt for dessert, if desired.
