Blueberry Cobbler

Prep Time: 5 minutes or less
Cook Time: 35 minutes

Serves: 4

Ingredients

  • 2 cups blueberries, fresh or frozen (thawed)
  • 2 tablespoons sugar
  • 1 tablespoon corn starch
  • 1 tablespoon water
  • 2 lowfat cereal bars, chop into fine pieces

    Preparation
    1. Preheat oven to 350 degrees F. Toss blueberries with sugar, corn starch and water. Place into ceramic baking dish lightly coated with cooking spray. Top with lowfat cereal bar pieces.
    2. Cover with glass lid or foil and bake for 30-35 minutes or until bubbly.
    3. Divide between 4 dessert bowls to serve.
    4. Optional serving suggestion: Nonfat frozen vanilla yogurt.
