Broiled Chicken Teriyaki

Prep Time: 10 minutes
Cook Time: 15 minutes

Serves: 4

Ingredients

  • 1/2 teaspoon ginger root, fresh
  • 1 garlic clove
  • 1/4 dry cup soy sauce, reduced sodium
  • 1 tablespoon sugar substitute
  • 2 teaspoons sesame oil
  • 1/8 teaspoon black pepper
  • 1 pound chicken breast, boneless/skinless, raw
  • 4 cups broccoli, chopped, frozen
  • 12 baby carrots
  • 1 dry cup rice, brown, cooked

    Preparation
    1. Please note that this recipe requires 8 hours of refrigeration time, which is not reflected in the prep time.
    2. Grate ginger; peel and mince garlic. Mix together ginger, garlic, soy sauce, sugar substitute, 2 tablespoons of water, sesame oil, and black pepper in a large bowl or resealable plastic bag.
    3. Cut chicken breast meat into strips and add to marinade, tossing to coat. Cover (or seal bag) and allow to marinate in the refrigerator for 8 hours or overnight.
    4. When ready to prepare meal, preheat broiler. Thaw broccoli; cut baby carrots in half lengthwise.
    5. Place rice and water (according to package directions) in a microwave-safe dish. Add carrots and broccoli to rice.
    6. Cover and microwave on high for 10 minutes. If using a variety of rice that takes more than 10 minutes to cook, then add broccoli and carrots only during the last 10 minutes of cooking time.
    7. While rice is cooking, lightly coat the broiler rack with cooking spray and broil the chicken, checking frequently for doneness. Discard marinade.
    8. Serve broiled chicken with cooked rice and vegetables.
