Cheesy Chorizo and Egg Burrito

Prep Time: 5 minutes or less
Cook Time: 15 minutes

Serves: 6

Ingredients

  • 2 tablespoons green onion, chopped
  • 2 ounces chorizo sausage links
  • 2 cups liquid-egg substitute
  • 2 fluid ounces milk, fat-free
  • 4 tablespoons cream cheese, fat-free
  • 2 teaspoons margarine, canola-based, trans-fat free
  • 2 ounces cheddar cheese, low-fat
  • 6 small whole wheat tortillas, about 70 calories each

    Preparation
    1. Wash and chop onion finely. Dice cooked chorizo. Set aside.
    2. Beat together egg substitute, milk, and softened cream cheese with a wire whisk until well blended. Set aside.
    3. Melt margarine in a large non-stick skillet with the edges lightly coated with cooking spray.
    4. Add egg mixture and cook until egg begins to set, stirring frequently.
    5. Stir in onion, chorizo, and cheese. Continue cooking until egg mixture is completely set, stirring occasionally.
    6. Spoon about 1/2 cup of the egg mixture onto each tortilla, dividing the mixture evenly among the 6 tortillas. Fold in opposite sides of each tortilla, then roll up burrito-style.
    7. Serve immediately with fresh oranges, if desired.
