Serves: 6 Ingredients 2 tablespoons green onion, chopped 2 ounces chorizo sausage links 2 cups liquid-egg substitute 2 fluid ounces milk, fat-free 4 tablespoons cream cheese, fat-free 2 teaspoons margarine, canola-based, trans-fat free 2 ounces cheddar cheese, low-fat 6 small whole wheat tortillas, about 70 calories each
Preparation - Wash and chop onion finely. Dice cooked chorizo. Set aside.
- Beat together egg substitute, milk, and softened cream cheese with a wire whisk until well blended. Set aside.
- Melt margarine in a large non-stick skillet with the edges lightly coated with cooking spray.
- Add egg mixture and cook until egg begins to set, stirring frequently.
- Stir in onion, chorizo, and cheese. Continue cooking until egg mixture is completely set, stirring occasionally.
- Spoon about 1/2 cup of the egg mixture onto each tortilla, dividing the mixture evenly among the 6 tortillas. Fold in opposite sides of each tortilla, then roll up burrito-style.
- Serve immediately with fresh oranges, if desired.
