Baked Parmesan-Dijon Chicken

Prep Time: 5 minutes or less
Cook Time: 25 minutes

Serves: 6

Ingredients

  • 3/4 dry cup bread crumbs
  • 1/4 dry cup Parmesan cheese, fat free
  • 3 tablespoons canola oil
  • 1 tablespoon white wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 3/4 pounds chicken breasts, boneless/skinless, raw

    Preparation
    1. Preheat oven to 375°F. Spray a 13x9-inch baking pan with cooking spray.
    2. Mix bread crumbs and cheese and spread out on a plate or pie pan. Mix oil, vinegar and mustard in a shallow dish.
    3. Dip chicken into oil mixture, then press into breadcrumb mixture to coat. Place in prepared baking pan.
    4. Bake, uncovered, for 20 to 25 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.
    5. Serve with spinach fettucini and sauteed vegetable medley, if desired.
