|   Prep Time: 5 minutes or less Cook Time: 25 minutes
  Serves: 6   Ingredients   3/4 dry cup bread crumbs  1/4 dry cup Parmesan cheese, fat free  3 tablespoons canola oil  1 tablespoon white wine vinegar  2 tablespoons Dijon mustard  1 3/4 pounds chicken breasts, boneless/skinless, raw
   Preparation   - Preheat oven to 375°F. Spray a 13x9-inch baking pan with cooking spray.  
 - Mix bread crumbs and cheese and spread out on a plate or pie pan. Mix oil, vinegar and mustard in a shallow dish.  
 - Dip chicken into oil mixture, then press into breadcrumb mixture to coat. Place in prepared baking pan.  
 - Bake, uncovered, for 20 to 25 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.  
 - Serve with spinach fettucini and sauteed vegetable medley, if desired.
