Mixed Veggie Casserole

2 (10oz) packages frozen mixed vegetables
1/2 cup shredded low-fat process American cheese
1 (8oz) can sliced water chestnuts, drained
2 tablespoons chopped onion
2 tablespoons low-calorie mayo substitute Vegetable cooking spray
 
Omitting any salt or fat, begin by cooking the mixed vegetables
according to their package directions. Drain, and then stirring gently,
combine the cooked vegetables with the cheese, water chestnuts, onion,
and mayo substitute.Preheat your oven to 350 degrees F and then spoon
the mixture into a 1 1/2-quart casserole dish coated with cooking spray.
Bake for 20 mins or until heated thoroughly.
 This light and tasty dish works as a great side to any meal.
