Spinach Stuffed Peppers 2 pkgs frozen chopped spinach cooked according to directions.
3 eggs
1 up flavored bread crumbs
salt/pepper to taste
1/2 tsp garlic powder
5 medium peppers cut in half
oil
Mix all ingredients well. Fill each pepper half with the spinach stuffing. Place in a large hot skillet with oil, cut side down. Turn heat down to a bit over medium. Turn over carefully when slightly browned, making sure they don't stick. Partially cover and cook until each pepper browns.
