Wisconsin Cheddar Cheese Soup Ingredients: 1/4 cup butter 1/4 cup all-purpose flour 2-/2 cups milk 1 cup beer or water 2 tsp. Worcestershire sauce 1-1/2 tsp. dry mustard 1/2 tsp. salt 1/4 tsp. cayenne pepper 2 cups shredded sharp cheddar croutons, optional Preparation: Melt butter in a large saucepan over medium heat. Stir in flour until smooth. Cook for one minute, stirring constantly. Stir in milk, beer, Worcestershire, mustard, salt and pepper. Heat to a boil, stirring frequently. Reduce heat and simmer for 10 minutes, stirring often. Stir in cheese until melted. Garnish with croutons. (Stir in salsa, bacon bits, cilantro for Tex-Mex taste.) Yield: 4 servings |
