Ginger Apple Salad
Makes 4 servings
Ingredients:
4 apples, cored and chopped
1 tablespoon grated ginger root
1 cup chopped celery
1/2 cup raisins
1/2 cup chopped walnuts
2 tablespoons honey
1/3 cup orange juice
1 head of Boston lettuce
2 oranges, peeled and segmented
fresh mint leaves
Preparation:
Combine first 7 ingredients and chill for one hour. Serve on lettuce leaves, nicely garnished with slices of orange and mint leaves.
