Sugar Free Banana Cake
1 cup banana, mashed
1/4 cup butter, softened
1/4 cup water
1/2 cup applesauce, unsweetened
3 large eggs
2 cups whole wheat flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup chopped walnuts
Preheat oven to 350°. Grease and flour a 9x13 pan.
Beat together mashed banana and soft butter until creamy. Beat in water and applesauce.
In a separate bowl, beat eggs until very foamy. Mix eggs into banana mixture.
In a separate bowl, blend flour, baking powder, baking soda and cinnamon; add to banana mixture and beat until very smooth.
Stir in walnuts.
Bake at 350° for 20 minutes or until knife inserted comes out clean. Cool and eat. Serves 10.
