Rice Custard
1/2 cup sugar
2 eggs
1/4 tsp. salt
1/2 tsp. vanilla extract
2 cups scalded milk
2 cups cooked rice
1/2 cup dark raisins
Blend sugar and eggs together well. Add salt and vanilla. Slowly add the scalded milk then the rice and raisins. Put in a 1 qt. baking dish, sprinkle top with nutmeg, and set the dish in a pan of hot water. Bake 350 degrees for 50-60 mins. Delicious served with Cool Whip.
