Borscht (Ukranian Beet Soup)
Ingredients Kolbasi, small package spare ribs, 1 onion, 6 med. beets, 2 carrots, 1 turnip, handful yellow beans, handful green peas (I usually just take anyvegetables that I have growing in my garden), 1 stalk dill (tops only), 1/2 cup white vinegar, 1 tablespoon sugar, two cups whipping cream, one handful macaroni.
Procedure Cut Kolbasi into small pieces... boil Kolbasi and spare ribs for about 45 minutes or until the meat begins to fall from the bones. Always skim off waste. Add all vegetables which have been cut into small pieces (including dill). The beets can be shredded if you like... I prefer them that way. While it is all boiling add the vinegar and sugar. Boil until vegetables are soft....During the last 5 minutes add the macaroni. (macaroni swells lots so do not use too much) Remove from heat and pour in the whipping cream. Do not return to heat. Now it is readyyyyy... enjoyyyy
