BROCCOLI-CORN QUICHE


Ingredients

 
2 tablespoons dry breadcrumbs    2 large eggs
2 large egg whites    1 cup cottage cheese
1/4cup chopped spring onions/shallots
6 teaspoons plain flour   1 clove garlic, crushed
1/4 teaspoon white pepper    1 cup milk
2 cups boroccoli florets 
1 can (185g) whole corn kernels, drained
1 1/2 cups grated Cheddar cheese

Procedure

Preheat oven to 180 degrees C.  Spray a 25 cm ceramic quiche dish with vegetable oil cooking spray.  Sprinkle with breadcrumbs.
 
In a blender, or food processor fitted with a metal blade, combine eggs, egg whites, cottage cheese, spring oinions, flour, garlic and pepper.  Mix until smooth.  Add milk.  Mix until combined.
 
Place brocolli, corn and grated cheese in a mixing bowl.  Mix well.  Stir in egg mixture.  Pour into prepared dish.  Bake until set and a knife inserted in centre comes out clean, about 30-45 minutes, or until firm.  Serve.
