CHEESE AND CHIVE DIP


Ingredients

1/2 cup cottage cheese     1/2 cup ricotta cheese
1 small clove garlic, crushed   1 teaspoon fresh lemon juice
1/8 teaspoon black pepper    3 tablespoons snipped fresh chives
1 tablespoon finely chopped fresh parsley
1 tablespoon chopped fresh marjoram or 1 teaspoon dried marjoram
Fresh chives and basil sprigs  for garnish

Procedure

In a food processor fitted with a metal blade, combine cottage and ricotta cheeses and galic, lemon juice and pepper.  Add the chives and parsley, marjoram and oregano and mix just until smooth, about 30 seconds, stopping after 15 seconds to scrape down sides of bowl.
 
Alternatively, put the cheeses, garlic, lemon juice and pepper into a blender and mix until smooth, regularly scraping down sides.  Pour into a bowl and stir in the chives, parsley, marjoram and oregano.  If mixing by hand, sieve the cheeses through a plastic sieve and the back of a wooden spoon.  Stir in the remaining ingredients.
 
Place chees dip in a small serving bowl.  Cover and refrigerate for 2-=30 minutes to allow flavours to blend.  Garnish with chives and basil sprigs ( if liked).
