CHEWY CHOC CHUNK COOKIES


Ingredients

 
BASIC CHEWY COOKIE DOUGH =
2 eggs    1+1/3 cups (265g) firmly packed brown sugar
1/2 cup (125g) vegetable oil     1 teaspoon vanilla essence
1 cup (150g) plain flour      3/4 cup (`110g) self-raising flour
1/2 teaspoon bicarbonate of soda
 
Beat eggs and sugar in small blowl with electric mixer about 1 minute or until changed in color. Stir in oil, essence and sifted dry ingredients, until combined (mixture will be soft). 
 
 
1 cup (125g) chopped pecans or walnuts, toasted            3/4 cup (125g) chopped raisins          1 cup (150g) choc melts, halved       1 cup (95g) white choc bits

Procedure

After you have prepared the basic chewy cookie part, stir in the remaining ingredients  (lower half of the recepie) until combined.  then cover and refridgerate for 1 hour.
 
Roll rounded tablespoons of mixture into balls, place on greased oven trays, making sure u leave room for them to spread.  Press balls into 6cm rounds.  Bake in a moderately hot oven about 10 minutes or until lightly browned.  Stand 5 minutes before lifting onto wire racks. Makes about 20,  (depending on what size u roll).      
 
A good tip ok,  they are lovely eaten warm,  so when u want one, they are lovely heated in the microwave for a few seconds.
