CHILLI BEEF CASSEROLE


Ingredients

375g lean minced beef    2 teaspoons olive oil
2 large onions, chopped (about 2 cups)
1 medium green capsicum, chopped (about 1 cup)
1/2 teaspoon chilli powder   1 can (425g) tomatoes
1/4 cup tomato paste  1 can (200g) red kidney beans, drained
3 corn tortillas, cut into quarters
1/4 cup grated cheddar cheese

Procedure

Cook beef in a large non-stick frying pan over a medium heat, stirring until browned, for about 5 minutes.  Place beef on a paper towel lined plate.  Wipe pan clean with paper towels.
 
Preheat oven to 180-degreesC.   Heat oil in the same pan over a medium heat. Add onions and cook, stirring, for 5 minutes.  Add capsicum and shilli powder and cook, stirring for 4 minutes.  Stir in beef, tomatoes with liquid and tomato paste, bring to the boil.  Reduce heat to low, cook for 5 minutes.  Stir in beans and corn.
 
Spray a medium-size baking dish with vegetable oil cooking spray.  Spoon half beef mixture into prepared dish.  Cover with half the tortillas.  Top with remaining beef mixture.  Cover with foil, bake for 25 minutes.  Uncover, top with remaining tortillas and cheese.  Bake until cheese melts, about 5 minutes.  Serve.
