APPLE AND DATE MUFFINS


Ingredients

2 cups wholemeal self-raising flour 2 teaspoons baking powder 1/2 teaspoon ground cinnamon 1/4 cup castor sugar 3 teaspoons poppy seeds 1 cup grated green apple, unpeeled 1/2 cup chopped dates 1 large egg 1 cup skim milk 1/3 cup melted margarine

Procedure

Preheat oven to 190 degrees C.  Lightly spray a 12 cup muffin tin stray with vegetable oil cooking spray.
 
In alarge mixing bowl, sift flour, baking powder and cinnamon,  Add any bran in sieve to bowl.  Add sugar, poppy seeds, apple and dates.  Mix well.
 
Lightly whisk egg and milk in a bowl.  Whisk in margarine.
 
Pour egg mixture into flour mixture.  Stir gently, using a metal spoon, about 16 times, until combined.
 
Spoon mixture into muffin cups, dividing equally.  Bake for 15-20 minutes, until a warm skewer inserted in centre comes out clean.  Remove muffins from tin, cool on a wire cooling rack.
