Howdy neighbor (I'm in CT).
Yes, there are shows that not only allow but encourage you to demonstrate your craft. The difficulty with scrolling is that you will need electricity (unless you have or build a foot-powered saw) and the clean-up. In the shows I've done where there have been people demonstrating their crafts, they always seem to do very well. I always have pictures of the process with me and stress that these are not laser cut but cut by hand.
