Hi all,

This was forwarded to me by my director...I thought it was very useful. It's a rundown of some of the recipes in the season's best (S/S) and how they ranked among the consultants trying them.

Here is a quick run down on the recipes we tasted last night from the new
Seasons Best Cookbook. The comments & opinions varied, but here are basic points

Black Bean, Hominy & Corn Salsa
Page 3
Good, colorful, would be good with another mexican Dish. Some thought a
little bland. Add green olives for a kick. Yellow hominy looked better than white.

Layered Mexican Party Dip
Page 6
VERY GOOD! Uses lots of tools, feeds 24, Shows off  Large platter very well.
A Keeper!

Roasted Red Pepper & Artichoke Spread
Page 8
Great taste, but made a small portion. Ingredients expensive, Hostess may not
be familiar with some.

Zesty Crab Salad in Cucumber Boats
Page 9
Like vs dislike about half & half. Too much cucumber for filling. Filling a
little bland. Very pretty presentation

Teriyaki Beef Fried Rice
Page 10
VERY GOOD! Ingredients very expensive. Sesame oil hard to find & expensive.
Consultant used olive oil instead. Teriyaki baste not in all stores. Use
chicken to cut cost and buy 1 bottle of Sesame oil to take to all of your shows.

Angel Almond Skillet Cake
Page 11
Used lots of tools, very easy to make. Showed off non stick cookware well.
Very expensive this time of year. Great July 4th dish!

Easy Posole Skillet
Page 12
Several ingredients hard to find. Please note suggested cooks tips in book
and use them. Needed salt. Consultant cut Jalapeno pepper amount in half.
Should not have. Needed a kick, but very pretty dish.

Chicken Curry Stir Fry Salad
Page 16
(not there last night, but I made over the weekend) Very good as a salad,
Beautiful dish, used lots of tools, Needed a little more dressing. Good combo of
sweet vs tart.

Greek Chicken Stir Fry Salad
Page 17
(made as Stir Fry) Creamy garlic dressing not at any stores. Used garlic
parmesan Dressing instead, making it too cheesy. Good dish, but expensive and hard
to find ingredients.

Garden Ranch Pizza
Page 18
Very Good, quick to put together, The mayo in it sounded "nasty", but tasted
great. A little expensive now, better when veggies are in season.

Pink Lemonade Dessert Squares
Page 20
"Would lock your jaws". Very waistline friendly, crust was great. Too tart,
cut back on lemon zest. Great Help Whip Cancer dish for May. Pretty pink color.

Summer Cobb Salad
Page 21
Absolutely Beautiful Salad!! Should be, cost consultant $40.00 to make. Great
taste, pretty in Large SE Bowl. Must wait until fruits are in season. Lots of
leftover items after making b/c you only used a few in a whole package of
items (i.e. radishes)

Mango Salsa Sundaes
Page 22 & on Cover
AWESOME!!!!!!!!!! Use prep bowls to pre dice all ingredients except one piece
to show, time consuming at a show if you do not.
This is a winner from Home Office. Made cups with Tortilas as suggested, but
also made with wonton cups. Wonton cups looked better and tasted better. Don't
forget the ice cream topping!

Fiesta Sandwich Ring
Page 25.
Very Good, Easy, easy to make. Great for a show where there is no oven.  Just
make the bread ahead. Put Peppers on the side.

Coconut Mango Tart
Page 27
Nasty, Nasty, Nasty. Not at all what you were expecting to taste. too much
coconut. Mangos too tart and hard to cut up for top. Not recommended.

Ice Cream Sandwich Torte
Page 29
(not there last night, but I made over the weekend) Very god. easy to make
and guests LOVED. DO NOT PUT ON LARGE PLATTER AS CALLED FOR!. It will not fit in
side by side freezer. Put on Chillzane server instead. Fits perfectly!

Banana Toffee Pizza
Page 32
Very good. Pretty, Good show recipe. A few thought bland, needed more
caramel, but most liked as is.

Thai Chicken Stir Fry
Recipe Card
Made as Salad. Very Pretty, Made alot. Not "Thai at all though". Needed a
little salt to combine flavors better.

Cappuccino Ice Cream Pie
Recipe Card
Very good, beautiful with caramel on top. Malt balls were whole. Needed to be
chopped fine to have flavor, but not large ball pieces.

We all agree, Home Office must have stock in the Cilantro and Hominy
market!

If anyone has tried any of the other recipes, I'd like to know what you
thought.

Lynn Kyle

I made the Athenian Spinach Rounds last night...they were good, however, I would use two packages of crescent rolls and the small scoop next time.  They were over flowing

Ham & Eggs Brunch Braid was a huge hit at my house this weekend.  And that is saying A LOT as my mother in law is very picky!  I added some red, green, yellow, and orange bell peppers and left out the onions.  My 2 yr old is on a bell pepper kick!  It was very yummy.  I think I'm going to try it with all 8 ounces of cream cheese next time.  Couldn't taste the cream cheese at all.  Definately a keeper around here!

Some of these recipes we have in other cookbooks.
I was wondering if you are supposed to taste the cream cheese in the brunch braid I think it is there to add more texture and to fluff up the eggs.
Also if the pink lemonaid is too tart would reducing the lemon zest help?  That isn't very tart it is sweet.

I am so going to be upset when we do all of these mango recipes.  I love mango but have found recently that I am allergic to them and it is a bad situation.  Plus I am betting they are much fresher here in FL.  Now I just hope that I am allergic only when I eat them.  I may have to have someone else cut them just to be sure.

Tiffany,
We tried some of the mango recipes at our cluster meeting- except that the consultant who made them hates mangos and substituted peaches.  They were fantastic!  I'm not sure if they were just like or as good as with mangos, but yummy!

Adding Christina's review to this thread so we don't lose it!

Thanks for the input.  I keep wanting to try a stir fry!

We tried the Thai chicken stirfry, the pink lemonade bars and the berry streusal tart tonight at our cluster meeting.

They were all very good. Even though the thai stirfry wasn't toom much Thai it was very good. We had it with rice.

I made the tart. I cut out the pie dough for the topping with the creative cutters. I would arrange it better next time but it came out good anyway.

I have made the Grasshopper Ice Cream Pie (recipe card) for my open house though only had one customer show up so instead I took it to church where we had lucheon about 2 wks ago and everyone loved it.  I also made the Thai Chicken Stir Fry which everyone thought it was a salad, served over hot rice.  Didn't think it taste very Thai either.

Just made the Curried Chicken Lettuce Wraps and they were awesome!
My neighbors and I get together with our preschool kids weekly and we have decided to make a different PC recipe each week for the adults- to help me train and to expand their recipes.(they are 2 of my best customers!)  We all loved it and I brought some leftovers home - just enough for one meal and DH raved too!(that doesn't happen often- he used to work as a chef!)  We put the lettuce in the tortilla wrap as the lettuce I bought was too small to wrap it in.
Also made the Savory Cheese Crostini - but so good, I had no leftovers there for him to try!  We used the Warm Marinara Topping with it. It was easy and tasted great.
Next week: Tres Leches cake (as recc. by Aprondad) and Lemon Herb Chicken Ring - will let you know....  Laura

I made the lemon herb chicken ring over the weekend.  I'm making it for a show next week and wanted a trial run.  Nice flavor with the lemon, and easy to make.  I didn't have the large scoop, so used the medium, and it worked fine.

I made the savory cheese crostini at a show a few weeks ago. It was very good, and fairly easy. I did the crostini (on the stone) ahead of time, and then made the cream cheese topping at the show. I had the hostess put that on top of the crostini while I made the warm marinara topping and the Olive Salad topping. Both were good, the olive salad topping was really good.

Only caveat: the host had a hard time finding the roasted red peppers, but found some in the pickle aisle - Vlasic roasted sweet red peppers. Later I checked at the same store and they did have some in the produce section by the onions and the chopped garlic in a jar...

I just used 8 oz. cream cheese because the goat cheese would be too expensive, and it turned out great.

I have made the Lemon Herb Chicken ring several times at home and when I pampered a biz of a friend and it got wonderful reviews. It smells out of this world and just melts in your mouth. Everyone wanted the recipe
