DUMPLINGS WITH TOMATO GRAVY

5 lg. tomatoes, peeled
1 med. onion, chopped
1/2 c. vinegar
1/2 c. sugar
2 tsp. salt
1 tsp. ginger
5 whole allspice
1 bay leaf
1 1/2 qts. broth or water

Simmer for 1/2 hour. To thicken, brown 3 tablespoons flour in 2
tablespoons fat and stir in and cook 15 minutes.

--DUMPLINGS:--

Sift 1 c. cake flour
2 tsp. baking powder
1/2 tsp. salt

break 1 egg in measuring cup. Add milk to make 1/2 cup. You
may add parsley or 1 tablespoon chopped fresh herbs. Add liquid
ingredients to dry ingredients. Beat well. Drop into hot tomato
gravy. Cover and simmer 5 minutes. Turn dumplings and simmer 5
more minutes. Serve hot.

BAKED GREEN TOMATOES 

8 medium tomatoes
1 cup small bread crumbs, toasted
1 tsp. salt
1/8 tsp. pepper
3 tbsps. butter/margarine
1/3 cup grated parmesan cheese

Cut tomatoes into 1/2" slices. Arrange 1/2 in a single layer in a greased baking dish.  Sprinkle ½ crumbs, salt and pepper and 1/2 the butter/margarine. Repeat for second layer and sprinkle cheese on top. Bake 350° 40-45 minutes until tender.

RED BEANS AND RICE

1/2 lb. red beans 
1/2 lb. ham, chopped
1 large onion, sliced or chopped
3 ribs of celery, chopped 
1/2 of green bell pepper, chopped coarsely
1-2 tbsps. chopped parsley
1-2 bay leaves
2 cloves garlic, crushed

Soak beans overnight. Next day, drain and simmer beans uncovered, for two hours, with enough water to cover beans. Add 1/8 lb. margarine, some pepper, 1 tbsp. WOR sauce, some tabasco. ham and remaining ingredients. Simmer 1 hour. Remove bay leaves before serving over rice.

Dijon Scalloped Potatoes

Ingredients

  • 2/3 cup chopped onion
  • 2 tsp. vegetable oil
  • 1 can (14-1/2 ounces) chicken broth
  • 2 pkgs.(3-oz.ea.) cream cheese, cubed
  • 1 Tbsp. Dijon mustard
  • 3 medium russet potatoes, peeled and thinly sliced
  • 1-1/2 to 2 cups crushed butter-flavored crackers
  • 3 Tbsp. grated Parmesan cheese
  • 2 Tbsp. butter or margarine (not spread), melted
  • 2 tsp. minced fresh parsley

Directions

In a Dutch oven, saute onion in oil until tender. Reduce heat to medium: stir in the broth, cream cheese and mustard until blended. Remove from the heat. Stir in the potatoes. Transfer to a greased 13 x 9 x 2-inch baking dish. Combine the crushed crackers, Parmesan cheese and butter; sprinkle over top.

Bake, uncovered, at 350 degrees F for 50 to 60 minutes or until potatoes are tender. Sprinkle with parsley. Let stand for 10 minutes before serving.

Turnip Casserole

3 med. turnips, peeled & sliced

2 T. butter

2 T. all-purpose flour

1 1/2 c. milk

1 t. salt

1/8 t. pepper

1/2 c. shredded mild Cheddar cheese



Cook turnips, uncovered, in boiling salted water 15 min. or until

tender. Melt butter in heavy saucepan over low heat; blend in flour,

and cook 1 min., stirring constantly. Gradually stir in milk; cook

over med. heat, stirring constantly, until thickened & bubbly. Stir in

salt & pepper. Pour sauce over turnips; sprinkle w/cheese. Bake

450-10min. 6 servings.

Squash Casserole

1 pound squash chopped
1/2 cup mayonaise
1 egg
1/2 cup onion chopped
1/2 stick butter
4 oz. velveeta cheese
1 sleeve of saltines crushed
salt and pepper to taste

Combine squash and onions in just enough water to cover salt
lightly cook until tender., drain. Add 1/2 a stick butter to
hot squash. Melt velveeta until smooth, cool slightly. Mix egg
and mayonaise together add velveeta salt and pepper to taste.
Add to warm squash.Pour into a buttered 9-inch round pie plate.
Melt remaining butter add to saltines and sprinkle on to
casserole bake about 30-40 minutes at 350-degrees.

Bubble and Squeak

This dish gets its name from the sound it makes while cooking.
It is wonderful served with pork dishes.

- 4 cups mashed potatoes (can be leftovers)
- 4 cups cabbage, chopped
- 1 medium onion, diced
- 2 tablespoons butter
- To taste, salt and pepper

Melt the butter in a heavy skillet. Add the cabbage and onion.
Cook until soft.
Mix in the mashed potatoes. Cook until browned, turning and
pressing down frequently. Season. Serve warm.

German Baked Beans

2- 15oz cans of pork and beans
1 qt, (or 14 oz ) or Kraut, rinced and drained
1 c. unsweetened apple sauce
1/2 c. brown sugar
1/2 t. salt
1/2 t. dry mustard

Mix all together and bake 375 for 1 1/2 hours. Even people that
do not like kraut will like this.

BOOTLEG BEANS

3 strips of bacon diced and fried

1 small white onion chopped

15 ounce can pork and beans

1 tablespoon dark brown sugar

2 tablespoons white vinegar

2 tablespoons catsup

Dice and fry bacon until half done then add chopped onion and cook

until slightly browned. Pour off most of the grease then add beans,

brown sugar, vinegar and catsup. Stir well and cover. Simmer on top

of stove for 30 minutes.

"Cheater" Refried Beans - Lindah
1 can beans
BBQ sauce, salsa, or lime juice and garlic

Mash beans with fork. Add liquid of choice and stir until you get the consistency of refried beans.

Skillet Fried Potatoes
 

These flavorful potatoes are easy to prepare and cook, and they
make a great side dish for a family breakfast or dinner.

2 to 3 tablespoons vegetable oil
1 large onion, quartered, thinly sliced
1 red bell pepper, diced
1 medium clove garlic, finely minced
6 medium red-skinned potatoes, cut in 1/2-inch dice
1 teaspoon ground paprika
Add some cayenne and white pepper for a mo better flavor
1/2 to 1 teaspoon salt, or to taste
Freshly ground black pepper, to taste

Heat oil in a large, heavy, nonstick skillet or electric skillet
over medium heat. Add onion and sauté until tender. Add the red
pepper and garlic and cook for 1 minute longer. Add the
potatoes, paprika, about 1/2 teaspoon salt, and pepper.
Cover and cook for about 10 to 15 minutes, or until potatoes are
just tender. Uncover and increase heat to medium-high. Continue
cooking for about 8 to 10 minutes, turning occasionally, until
nicely browned.
Serves 4 to 6.

Diane's poor man's crab cakes

2 cups grated zucchini (I use a little more)
2 beaten eggs
1 cup seasoned bread crumbs
2 Tbsps mayo/miracle whip
2 tsp Old Bay seasoning

Mix everything together, shape into patties and fry in some olive oil.

Fried Cabbage
 
½ pound bacon
1 large head cabbage
½ tsp salt
½ tsp black pepper
1 clove garlic
½ tsp red pepper flakes (optional)

Fry the bacon until crispy in large frying pan. Pour off most of
the grease. Break the bacon into pieces.
Chop the cabbage into pieces removing the hard center. Add the
cabbage to the pan containing the bacon. Add the seasoning and
1/3 cup of water.
Cook covered over medium heat for 5 minutes. Stir.
Remove the pan cover and continue cooking until desired
tenderness, stirring as needed.

Note: You preserve more vitamins and mineral if you cook the
cabbage less.

Green Bean Casserole Recipe

1 can (26 oz.) Campbell's Condensed Cream of Mushroom soup
1 cup milk
2 tsp. soy sauce
1/2 tsp. black pepper
2 pkgs. (16 oz.) each frozen cut green beans, cooked and drained
1 can (6 oz.) or 2 cans (2.8 oz. each) Durkee French fried onions

In 13 x 9 inch baking dish combine soup, milk, soy sauce and pepper. Stir in green beans and half of the onions. Bake at 350 degrees for 25 minutes or until hot. Stir. Top with remaining onion. Bake 5 minutes more.
