APPLESAUCE MOLASSES BARS
 

1 c. firmly packed brown sugar
1/2 c. softened butter
1 c. applesauce
1/3 c. light molasses
2 eggs
1 1/2 c. flour
1 c. whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. allspice
1/2 c. chopped nuts
1 tbsp. powdered sugar

Heat oven to 350 degrees. In large bowl, cream brown sugar and butter until light and fluffy. Beat in applesauce, molasses and eggs until smooth. Lightly spoon flour into measuring cup. Level off. Add all purpose flour, baking soda, cinnamon, salt and allspice. Blend well. Fold in nuts. Spread evenly in ungreased 15"x10" jelly roll pan. Bake at 350 degrees for 20 to 25 minutes or until toothpick comes out clean. Cool. Sprinkle with powdered sugar. Makes 48 bars. 1 bar = 80 calories.

Combine butter with sugar. Pour in molasses and add egg. Add remaining ingredients except flour. Beat 30 seconds.

Stir in flour; beat 1 minute.

Drop by tablespoonfuls onto cookie sheets and bake 10-12 minutes or until edges begin to brown lightly. Use a spatula to remove; cool and pack into airtight tins.

SOFT MOLASSES COOKIES  

3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
1/2 cup molasses
3/4 cup evaporated milk
3/4 tablespoon vinegar
1 cup shortening
1 cup sugar
1 egg

Preheat oven to 375°F. Stir together flour and baking soda, salt and spices.

Combine milk and vinegar.

Cream shortening and sugar thoroughly; add egg and molasses. Beat well.

Add the evaporated milk and vinegar alternately with the dry ingredients. Mix well.

Drop from spoon onto greased baking sheet leaving 3/4 inch between them.

Bake at 375°F until slightly brown on edges or about 10 minutes, depending on size of cookies; watch carefully to avoid overbaking.

Remove with a spatula to cool on wire rack.

Molasses Cookies

12 tablespoons (1 1/2 sticks) unsalted butter
1 cup sugar
1 egg
1/4 cup molasses
Extra-fine granulated sugar

Preheat the oven to 350 degrees F.
Mix all the dry ingredients together except the sugar and set
aside. Cream the butter and sugar together. Then beat in the egg
and molasses, and add to the dry ingredients and mix well. Form
balls 1 inch in diameter, roll them in extra-fine granulated
sugar, and place them on an ungreased cookie sheet. Bake 12 to
15 minutes.
Makes about 4 dozen cookies.

2 cups all-purpose flour

2/3 cup sorghum molasses
6 tablespoons melted butter or oleo
2 teaspoons vanilla extract

3/4 cup dark raisins

In a large bowl, combine flour, brown sugar, spices, baking soda and salt
until well blended. Stir in molasses, butter, vanilla and eggs until well
blended;
add raisins. Spread evenly in a 13- by 9-inch metal baking pan that is lined
with greased foil. Bake in a preheated 375-degree oven for 20-25 minutes or
until golden on the edges. Cool completely in pan on wire rack. When cool,
transfer on foil to cutting board. Cut in to bars.

Glaze...

Ingredients:

3/4 c. confectioners' sugar
4 tsp. water
1 T. grated orange rind

Directions:

Mix glaze and spread on baked squares, then cut into bars.

Ingredients:

2 tsp. baking powder

1 tsp. salt

2 cups granulated sugar

1 1/2 cups quick cooking rolled oats

Sift together flour, baking powder, salt, cloves, ginger, and sugar into large mixing bowl. Stir in melted butter, eggs, and molasses. Mix until smooth with electric mixer, about 2 minutes. With a large spoon, stir in rolled oats. Drop by teaspoonfuls onto ungreased cookie sheet about 1-inch apart. Bake in a 375 degree oven for 10 minutes. Do not over bake. Makes 3 dozen cookies.

Spiced Molasses Cookies

2&1/4 cups all purpose flour

sugar for rolling

In a large mixing bowl. Combine all ingredients, except final sugar. Beat on low speed, scraping bowl often, for 2-3 minutes or until well mixed. Cover and refrigerate at least 2 hours, until firm. Preheat oven to 350°. Shape teaspoonsful in 1 inch round balls. Roll in sugar; place on ungreased cookie sheet about 2 inches apart. Bake for 10-12 minutes, until slightly firm to touch. Remove immediately.

Old Fashioned Molasses Cookies

1 cup molasses
1 cup white or brown sugar 
1/2 cup hot water
1 cup shortening
1 level tablespoon ginger
1 level tablespoon cinnamon
1 level tablespoon soda
2 eggs
2 teaspoons baking powder
flour to make dough soft

Roll dough until thick. Cut and bake at 375° for 8-10 minutes. Do not get dough too stiff. Do not over bake.

Molasses Cookies
 
1 C. sugar

1 egg

1 C. molasses

1 T. cinnamon

1 T. ginger

1 C. boiling water

1 T. soda

5 C. flour

Mix sugar, egg and molasses together. Add spices. Add soda to boiling water and mix with sugar and molasses mixture. Add flour and blend well.

Chill at least 3 hours. Roll out on floured board rather thick (about 1/4 inch). Cut with your favorite cookie cutter.

Bake at 400°F. about 9 minutes. Be careful not to overbake.

Cool and frost.

Frosting

2 C. confectioner's sugar

1 t. vanilla

Mix milk in a little at a time to desired consistency. If very thin, it is will produce a glaze consistency.

Molasses Drop Cookies

Ingredients:

  • 2/3 cup shortening
  • 1/3 cup brown sugar
  • 1 egg
  • 3/4 cup Fancy Molasses
  • 1/4 cup sour milk
  • 2 cups sifted flour
  • 1/2 tsp. salt
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1 tsp. baking soda

Method:

Cream shortening, blend in sugar, egg, Fancy Molasses and milk. Add sifted dry ingredients, mix thoroughly. Drop from a spoon onto a greased cookie sheet. Bake at 375oF for approximately 10 minutes.

Serve straight out of the oven and enjoy! But be forewarned, you won't be able to eat just one!

MOLASSES SOUTHERN CRISPIES

1 cup Brer Rabbit Real New Orleans Molasses
1/2 cup butter
1 tsp, baking soda
2 1/4 cups sifted flour
1 3/4 tsp. baking powder
1 tsp. salt
1 tsp. ground ginger
1 tsp. ground cinnamon
granulated sugar (for sprinkling on tops)

Heat molasses to boiling point. Remove from heat. Stir in butter and baking soda.

Sift together flour, baking powder, salt, ginger, and cinnamon. Add to molasses mixture. Chill dough.

TO BAKE:
Roll out as thin as possible. Cut into desired shapes. Place on lightly greased baking tin and sprinkle with granulated sugar.

Bake 5 to 7 minutes at 350 degrees F.

Makes approximately 72 cookies

MOLASSES COOKIES

If anyone is familiar with the Dancing Deer Baking Company's
ginger-clove cookies, these are very close to them.

4 cups all-purpose flour
1/2 teaspoon salt
2 1/4 teaspoons baking soda
2 teaspoons ground ginger
1 1/4 teaspoons ground cloves
1 1/4 teaspoons cinnamon
1 stick (1/2 cup) unsalted butter, softened
1/2 cup vegetable shortening
3 1/2 cups sugar
1/2 cup unsulfured molasses
2 large eggs

Preheat oven to 325°F. and lightly grease 2 large baking sheets.
In a large bowl whisk together flour, salt, baking soda, ginger,
cloves, and cinnamon.
In another large bowl with an electric mixer beat together
butter, shortening, and 3 cups sugar until light and fluffy and
beat in molasses. Beat in eggs, 1 at a time, beating well after
each addition. Gradually beat in flour mixture and combine well.
In a small shallow bowl put remaining 1/2 cup sugar. Form dough
into 2-inch balls and roll in sugar. On baking sheets arrange
balls about 4 inches apart and flatten slightly with bottom of a
glass dipped in sugar.
Bake cookies in batches in middle of the oven 15 minutes, or
until puffed and golden. (Cookies should be soft.) Transfer
cookies with a metal spatula to racks to cool.
