Skillet cabbage With Onions And green Peppers

2 tablespoons vegetable oil
3 cups cabbage -- finely shredded
1 cup celery -- chopped
1 small green pepper -- chopped
1 small onion -- chopped
1/2 teaspoon salt
1/4 teaspoon pepper


Heat the oil in a large skillet over medium heat about 20 minutes before serving time. Add ingredients and cook over medium to low heat about 15 minutes. Stir often. Cover pan during the last 5 minutes of cooking time - stir once or twice. Serve immediately. Vegetables will be crisp. Serves 4.

Fried Cabbage
 
1 head cabbage
1 pound bacon
1/2 large onion
garlic salt
salt and pepper
pimiento -- optional
dash worcestershire sauce

Fry bacon; leave all of the grease in the pan. Cut the onion up fine and add it and chopped cabbage to the grease. Add a dash of Worcestershire sauce. Sprinkle with garlic salt generously. Add salt and pepper according to taste. Sprinkle with crumbled bacon and serve.

Cabbage Stuffed Bread

1/2 cup scalded milk
3 tbsps. shortening
3 tbsps. sugar 
1/2 tsp. salt 
1/2 cup warm water
1 pkg. dry yeast or 1 cake yeast
1 egg
3&1/4 cups flour

Mix milk, shortening, sugar and salt till shortening melts. Cool to lukewarm. In separate bowl, mix warm water and yeast. Combine these 2 mixtures. Stir in egg and gradually add flour till well blended. Cover with cloth and let rinse till doubled in bulk. Roll out on floured board till very thin. Cut into 4 x 4" squares.

Filling:
1 medium head cabbage. cored & shredded fine
1 lb. ground beef 
1/2 cup chopped onion
salt & pepper to taste
2 tbsps. cooking oil

Fry cabbage and onion in oil, stirring constantly till tender and lightly browned. Fry beef in separate skillet till red is gone. Drain well. Add cabbage mixture and seasonings. Place about 1/3 of this mixture in each bread square, like a petal. Seal top and seams. Place side by side in greased 2x8x12" pan. Bake at 375° for 20 minutes or till brown. Brush with butter to keep bread soft.

Soulful Cabbage - Kay
 
Ingredients
4      slices bacon, cut into 1-inch pieces
1      onion, chopped
1      head cabbage, cut into six wedges
       Salt and pepper to taste
1-2     cups chicken broth
1/4   cup apple cider vinegar
1/4   cup brown sugar
       Dash Tabasco, if desired

Directions
Cook bacon pieces until crisp. Remove them from skillet and set aside. Cook onion in bacon grease until tender.
Add cabbage along with salt and pepper to taste. Add chicken broth (or water or combination) and cook 45 minutes to 1 hour.
After about a half-hour, add vinegar and brown sugar and continue cooking until cabbage is tender.
Sprinkle with crisp bacon before serving.

Sweet and Sour Cabbage



3 T. Margarine

1 dash nutmeg

1-1/2 t. granulated sugar

5 c. cabbage, shredded

1 dash cayenne pepper

2 T. vinegar

1 medium onion, chopped

1 t. salt



Melt butter or margarine, add cut up cabbage, onion, salt and nutmeg and

cook, covered, over low heat until tender.. Add rest of ingredients and cook

for 5 minutes longer.

Caraway Sour Cream Cabbage



1/2 cup water



1/2 teaspoon salt



6 cups shredded cabbage



1 large onion sliced



1 cup dairy sour cream



2 tablespoons all purpose flour



1 teaspoon prepared mustard



1 teaspoon caraway seed



1/2 teaspoon salt



1/8 teaspoon pepper



Paprika



In saucepan bring water and salt to boiling.



Add cabbage and onion then cook covered for 8 minutes.



Drain reserving cooking liquid then add enough water to cooking liquid to make 3/4 cup.



In same saucepan blend together sour cream, flour, mustard, caraway seed, salt and pepper.



Stir in cooking liquid then fold in cabbage and onion and turn mixture into a casserole dish.



Bake covered at 350 for 20 minutes stirring once.



Sprinkle generously with paprika then serve immediately.

Smothered Cabbage
 
  • 1 small head of green cabbage, with the wilted or yellow leaves removed
  • 1 tablespoon of vegetable oil
  • 1 large yellow onion, chopped coarse
  • 1 large green bell pepper, seeded and cut into strips or rings
  • 1 teaspoon of crushed red pepper
  • 1/4 teaspoon of freshly ground black pepper
  • 1/4 teaspoon of salt 

    Using a long, sharp knife, core the cabbage, chop it into 1 inch pieces or shred coarse.
    Place in a large colander, rinse with cold water.
    Heat the vegetable oil in a large heavy skillet with a lid over medium low heat.
    Sauté the onion until light golden, about 10 minutes.
    Add the cabbage and bell pepper, sprinkle with hot peppers  and salt.
    Press the cabbage down with lid (add extra weight on top of the lid if necessary to hold down)
    Cook, covered (stirring from the bottom to top occasionally), until the cabbage is tender, but  not mushy, about 25 minutes.
     Makes 6 side dish servings

    1 Large onion, coarsely chopped
    2 Tablespoons butter or margarine
    1 Medium cabbage head - (abt 2 lbs), coarsely shredded
    1 Can Spam luncheon meat - (7 oz), diced
    1/2 Cup water
    1/2 Teaspoon caraway seeds
    1/2 Teaspoon salt
    1/8 Teaspoon freshly-ground black pepper
    2 Tablespoons vinegar
    2 Teaspoons sugar

    In large saucepan, saute onion in butter until golden brown, stirring often. Add cabbage, Spam, water, caraway seeds, salt, and pepper. Bring to a boil; cover and simmer 10 minutes. Stir in vinegar and sugar; mix well. This recipe yields 4 servings.

    Amish Cabbage Dinner

    1-1/2 pounds hamburger, drained
    1/4 cup catsup
    1/2 head cabbage, shredded
    6 to 8 cups raw potatoes, diced
    Velveeta cheese
    1 1/2 cups milk

    Brown the hamburger; drain and add the catsup and set aside.

    Layer in a baking dish 1/2 of the cabbage,
    1/2 of the potatoes, 4 or 5 slices Velveeta cheese,
    and all of the meat mixture.
    Add another layer of the cabbage and potatoes.

    Pour 1-1/2 cups milk over casserole.
    Bake, covered, for 1 1/2 to 2 hours at 350 degrees F.

    1 pint sour cream

    2 cups distilled white vinegar



    Heat oil in skillet over medium heat. Add cabbage, salt and pepper then cook until tender.



    Mix sugar and flour together in a medium bowl then add sour cream and mix well. Stir in vinegar and mix well. Add mixture to cabbage and simmer all together until desired consistency is reached.

    Cabbage and Noodles

    Another name for this dish is Halushka.

    1 stick of butter

    1 lg. onion, peeled and cut in strips

    1 small head of cabbage, cut into strips

    1 tsp. salt

    1/4 tsp. pepper

    1 box or bag of large egg noodles, cooked and drained

    1 pint of sour cream

    Melt the butter in a large pan or pot, large enough to hold the chopped cabbage. Sauté the cabbage and the onion in the butter until glossy and tender. Now add the salt, pepper. Cover and let the cabbage mixture cook over low heat for about 15 minutes. Add cooked drained egg noodles and mix. Serve with bowl of sour cream, if desired. Salt to taste.
