WEST TEXAS SPECIAL HAMBURGER CASSEROLE



1 lb. ground round

2 (15 or 16 oz.) cans black-eyed peas with jalapeño

2 c. cooked rice

1 (16 oz.) can tomatoes, drained

1 c. grated sharp Cheddar cheese

1/2 c. minced onion

1 lg. garlic c l o v e, crushed

1 tbsp. butter

Salt and pepper



Brown meat in large skillet, then mix in ingredients in the order

given: Black-eyed peas, rice, tomatoes, cheese, onion, garlic,

butter and salt and pepper to taste. Bake in 13x9x2 inch baking pan

at 350 degrees for 20 minutes.



Serves 6 to 8

Hamburger Upside-Down



1 lb ground beef

2 T vegetable oil

1 c sliced celery

1/4 c minced onions

1/4 c chopped green bell pepper

1 t salt

1/4 t pepper

1/4 t chili powder

1/2 clove garlic -- minced

1 can condensed tomato soup



In a large skillet, brown ground beef hot oil. Add remaining

ingredients. Simmer for 10 minutes. Drop parsley biscuit topping

over hot mixture in skillet. Bake in a 425 degree F oven for 20

minutes. Turn out onto a large platter. Cut in wedges and serve

immediately.



Serves 6 to 8.



Parsley Biscuit Topping:



2 c sifted all-purpose flour

1 T baking powder

1 t salt

1/3 c shortening

1/4 c minced fresh parsley

1 c milk



Sift dry ingredients into bowl. Cut in shortening with pastry

blender or two knives. Stir in parsley and milk, only until flour

is moistened.

Hamburger Jubilee



1 lb. ground beef

2 c. uncooked reg. noodles

1 can (about 1 lb.) tomatoes

2 c. shredded cabbage

1 c. sliced pared raw carrots

1 can (10 3/4 oz.) cream of mushroom soup

1 c. water

1 t. instant minced onion

1/2 t. salt



Brown ground beef, breaking up into small chunks. Spoon into a 8 c. baking

dish. Stir in remaining ingredients; cover. Bake at 350° 40 min. or

until noodles

and vegetables are tender.



Makes 6 servings.

Hamburger Cornbread Surprise



1 lb. ground beef

1/3 cup of chopped onion

1 can stewed tomatoes

3/4 tsp. salt

1 tsp. Worcestershire sauce

1 can kidney beans(drained)

1 8 oz. sharp cheddar cheese

1 package Martha White cornmeal



Brown ground beef and onions in iron skillet (drain oil). Add tomatoes,

salt & Worcestershire sauce. Simmer for 15 minutes. Stir in beans, mix

well. Place in a 10 1/2 inch iron skillet. Follow directions on cornmeal

package to make batter. Spread cornbread batter over mixture with wet

knife. Cook at 425 degrees for 20 minutes.



Servings:6-8

Baked Stuffed Hamburger



1 1/2 lbs. ground chuck

4 T. chopped parsley

4 T. chopped onion

2 t. salt

1/4 c. vegetable oil

1 1/2 c. soft bread crumbs

3/4 c. chopped peanuts

few grains of pepper

2 T. water

tomato slices

bacon curls



Lightly mix beef, parsley, onion, 1 1/2 t. salt and veg. oil. Combine

remaining salt with remaining ingredients except tomato and bacon.

Alternate layers or meat and stuffing in baking dish, ending with layer

of stuffing. Top with tomato slices and bacon curls. Cover. Bake at 350°

for 45 min. Uncover; continue baking for 15 min.



Makes 5 servings.

Quickie Dinner



1 lb ground beef

2 14.5 oz cans stewed tomatoes

1 tsp salt

1 tsp chili powder

1/4 tsp pepper

1/4 tsp sugar

1 cup uncooked macaroni



IN a large skillet or saucepan, brown ground beef and onions. Drain off drippings. Add tomatoes and seasonings and bring mixture to a boil. Reduce heat, cover and simmer for five minutes.



Add macaronis and cover; then simmer for 15 minutes.



Uncover and simmer until macaroni is tender and sauce is thickened.

Cheeseburger Rice

1 lb. ground beef
1 3/4 C. water
2/3 C. ketchup
1 T prepared mustard
2 C. uncooked Minute rice
1 C. shredded cheddar

Brown meat in skillet; drain.

Add water, ketchup and mustard. Bring to a boil.

Stir in Minute rice.

Sprinkle with cheese, cover.

Cook on low heat for 5 minutes.

Serves 4

2 Step Italian Burger Melt

1 1/2 lb. hamburger

1 can tomato soup

1/3 C. water

1 t. dried oregano

1 C. shredded Mozzarella cheese

Shape hamburger into patties and brown on each side about 1 minute. Place in a shallow 2 qt. baking dish. Mix soup, water and oregano. Pour over patties. Top with cheese and bake at 400 about 20 minutes or until done. Serve on rolls or over pasta.

Mediterranean Torte



This layered casserole dish is made with tortillas, Italian flavored

ground beef, spinach and lots of mozzarella cheese.



Ingredients:



* 1 pound hamburger

* 1/2 medium onion, chopped

* 1 tablespoon olive oil

* 1 teaspoon Italian seasoning

* 1 1/4 tablespoon minced garlic

* 1/4 teaspoon black pepper

* 1 teaspoon salt

* 1/4 teaspoon garlic salt

* 1/8 teaspoon paprika

* 1/8 teaspoon cayenne pepper

* 9 ounce package frozen chopped spinach, cooked as package

describes and drained very well

* 8 flour tortillas

* 2 cups shredded mozzarella

1/2 cup spaghetti sauce



Method



Preheat oven 375 degrees. In Dutch oven over medium heat, add oil and

onion and cook 5 minutes. Add hamburger and cook until done, drain

fat. Add spinach and mix lightly to combine. Add all seasonings and

mix thoroughly. In a 8 or 9 inch round cake pan place 1 tortilla, on

top add about 1/2 cup meat mixture and a sprinkle of cheese. Continue

adding layers, ending with tortilla, and spoon sauce over all. Bake

for 20-25 minutes, sprinkle with a little more cheese.

Bisquick Main Casserole Dish

1 lb. lean ground beef, cooked & drained
1 can corn, drained
1 can sliced carrots, drained or 1 lb. fresh cooked carrots
1 can tomato soup
1 tbsp. Italian seasoning
1/2 tsp. chili powder
1 recipe Bisquick or Jiffy mix biscuits

Preheat oven to 350 degrees. Stir first 6 ingredients together and place in a large casserole. Cook covered for approximately 25 minutes. Mix biscuits and spoon on top of casserole. Bake uncovered approximately 10 minutes or until biscuits are done.

Beef and Potato Budget Skillet Meal

2 tablespoons melted shortening
1 layer sliced onions
1 layer ground beef
1 layer sliced potatoes
1 layer celery (optional)
1 can tomato soup diluted with 1 can water
1 tablespoon Worcestershire sauce
1/2 teaspoon chili powder
salt and pepper

In a large frying pan put all ingredients.

Steam slowly in covered frying pan until done, about 40 minutes.

Texas Hash

3 large onions, sliced

1/2 cup uncooked rice

1 large green bell pepper, minced

3 tbl fat

1/8 tsp pepper

1lb ground beef

2 cups cooked tomatoes (1lb)

1 tsp chili powder

2 tsp salt

Heat oven to 350 degrees (medium). Saute onions and green peppers in fat until onions are yellow. Add meat and fry until mixure falls apart. Stir in the rest of ingredients. Pour into greased 2 quart baking dish. cover and bake 2 hour removing cover last 15 minutes. Serve hot

yield: 6 servings

1 (10 count) can flaky biscuits, cut in half

Brown beef, add beans, Manwich, onions, and brown sugar. Add biscuits (on top, cut side down) and sprinkle with cheese. Bake at 350 degrees for 20 minutes.

Brown ground beef and onion. Salt and pepper to taste. Add pork & beans and milk. Simmer on low heat about 20 to 30 minutes after it starts to bubble.
