Poor Man's Pierogies And Sausage



1 pkg. kielbasa or Polish sausage (fresh Polish sausage, more

expensive)

1 lb. elbow macaroni

1 can sauerkraut

1 medium onion diced

1 stick (1/4 lb.) of margarine - .25

1 tbsp. oil

to taste salt, pepper

Directions

Boil noodles according to pkg. directions. In a large fry pan,

brown sausage in oil until lightly browned. Add margarine and diced

onion and saute. Drain and rinse sauerkraut; add to sausage and

onion. Mix well. Drain noodles and add to pan. Salt and pepper to

taste. Stir to mix and enjoy!

Makes 6-8 servings. Costs about .50 per serving!

Easy Red Beans and Rice

This serves 4 hungry people.

Heat 2 Tbsp. olive oil in a skillet. Add 1 Kielbasa sausage that has been sliced into 1/2 inch circles, 1 chopped yellow onion, and 4 minced garlic cloves. Saute 15 minutes. Add 3 cans of kidney beans (undrained), 1 can of chicken broth, and 1/2 tsp. cayenne pepper. Turn heat to medium-low, cover, and cook for 45 minutes.

Serve with hot cooked rice and plenty of Louisiana hot sauce. Leftovers taste even better the next day!

Weiner Bean Pot
2 1 pound cans pork and beans
1 envelope onion soup mix (Lipton, dry)
1/3 cup catsup
1/4 cup water
2 Tbsp brown sugar
1 Tbsp prepared mustard
1 pound hot dogs (cut up)

Combine all in a casserole. Bake uncovered at 350 degree oven for 1 hour. This should serve the 5 of you along with maybe a tossed salad. If you have big eaters, double.

Chili Dog Casserole
Serves 4 - Can be doubled

2 cans chili with beans
1/2 pkg hot dogs(4)
tortillas

Oven 425 preheated. Spread 1/2 chili in casserole. Wrap hot dogs in tortillas. Place on top of beans seam side down. Cover with rest of beans. Cover with foil. Bake 30 minutes. You can add cans of chili if you want.

Chili Cheese Dog Pot Pie

Yield: 4 servings

2 cups biscuit baking mix
2/3 cup water
3 cups chili with beans
1/2 pound hot dogs, sliced
2 cups shredded Cheddar cheese

Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, mix together the baking mix and water to form a smooth dough. Set aside.

Spread half of the chili into the bottom of a 1 1/2-quart casserole dish. Make a layer of the hot dogs over the chili. Cover the hot dog layer with cheese, then top with the rest of the chili.

On a lightly floured surface, roll out the biscuit dough to 1/4 inch thickness. Lay the dough over the contents of the dish, and poke a few slits to vent steam.

Bake for 15 to 25 minutes in the preheated oven, or until the top crust is golden.

Barbecued Frankfurters
1/3 cup vinegar
1-1/2 cups tomato juice
2 Tbsp. brown sugar
2 Tbsp. prepared mustard
1 teas. garlic salt
1 teas. salt
1/4 teas. pepper
1 small onion; minced
1/4 cup catchup
1 Tbsp. Worcestershire sauce
8 to 10 frankfurters, cut into 1" lengths

Combine vinegar, tomato juice,brown sugar,mustard, salts, pepper and onion. Cook, uncovered, 20 minutes, then stir in catchup and Worcestershire. Cool, then refrigerate until needed.
  At serving time: Heat up barbecue sauce. Add frankfurters and heat gently.

Ham Souffle'

Ingredients

  • butter
  • 8 slices white bread, crusts removed
  • 2 cups ground ham
  • 1 cup grated sharp cheddar cheese
  • 1 Tbsp. prepared mustard
  • 3 eggs, beaten
  • 2 cups milk

Directions

Spread butter on both sides of bread. Place in bottom of 9x13 inch baking dish to cover completely. Combine next 3 ingredients in bowl. Spread over bread. Mix eggs and milk in bowl. Pour over ham mixture. Chill for several hours or overnight. Bake at 325 degrees F for 1 1/4 hours.

Black-Eyed Peas And Sausage Bake

1 large onion, cut into wedges
1 pound spicy pork sausage
1 large green pepper, cut into thin strips
2 cloves garlic, minced
2 15-ounce cans black-eyed peas, drained
1 14-ounce can diced tomatoes
1/2 teaspoon thyme (optional)
1 6-ounce package cornbread mix.

Heat oven to 425 degrees. Grease a 13- by 9-inch baking dish. In a skillet,
brown sausage. Stir in onions, peppers and garlic. Cook until vegetables are
tender. Stir in peas, tomatoes and thyme.

Cook until heated and pour into baking dish. Mix cornbread according to
package directions. Spoon the mix around the edges of the pan with the
sausage and peas mixture.

Bake for 25 to 30 minutes until cornbread is done. Servings: 8.

Mama Pereda Spam Delight  (for a quick meal that is delicious)    
    1 can regular spam  (diced into bite size)
   1 can stewed tomatoes (breakup into smaller pieces with your hands)
   1 can cut green beans (drained liquid)
   1 cup diced onions
   Salt
   Black pepper
   Garlic powder
1.  Brown the spam and onion in a frying pan with olive or canola oil
2.  Add stewed tomatoes and green beans
3.  Add seasoning: salt, black pepper, and garlic powder to desired taste
4.  cook for additional 2 to 3 minutes.
5.  Serve over white rice.

German Pork Chop Feast



6 pork chops

4 potatoes

1 can sauerkraut

Few tablespoons water

Salt and pepper, to taste



Season and brown chops. Place in a casserole. Slice

potatoes over the top. Mound sauerkraut on the pork

chops. Remove excess fat from the skillet. Add water

and heat. Pour resulting brown broth over the

sauerkraut. Cover the casserole and bake at 325

degrees F for 2 to 2 1/2 hours.

El-Cheapo Bologna and Baked Beans Dinner

1 lb Chunk bologna; chopped into 1/4 inch dice
16 oz Can of baked beans
1/4 c Onion; chopped
2 ts Blackstrap molasses
2 ts Vinegar
2 ts Prepared mustard
2 tb Ketchup
2 tb Canned salsa
1/4 ts Black pepper

Add all the ingredients into a saucepan and stir to mix. Heat gently until the mixture starts to simmer.

Serve on toast or as a baked potato topping.

Serve with a tart accompliment like cole slaw and dill pickles.

Bacon and Egg Bake
 
6 slices bacon
2 med. onions, sliced
1 can cream of mushroom soup
1/4 c. milk
5 hard cooked eggs, sliced
2 c. (8 oz.) shredded Cheddar cheese
Dash of salt & pepper
English muffins, split & toasted

Heat oven to 350 degrees. Fry bacon until crisp. Remove from skillet. Drain fat, reserving 2 tablespoons. Sauté onion in bacon fat. Stir in soup, milk, eggs, cheese and seasonings. Pour into 10 x 5 inch baking dish. Top with crumbled bacon. Bake 20 minutes. Serve on muffin halves. 6 to 8 servings.

Ingredients



1 batch seasoned mashed potatoes

3 cups favorite medium white sauce

2/3 cup grated American cheese

2 cups cubed, cooked or canned ham

1 can each cooked carrots, drained peas

Directions

Heat oven to 450º F. Shape potatoes into serving-size nests on

a greased baking sheet and bake at 450º F, until browned. Combine

sauce, cheese, ham, carrots and peas; heat thoroughly. Place into

potato nests and serve.

Vienna Potatoes

Ingredients



enough potatoes for your family size

1 can mushroom soup

1 tsp. each onion, minced; Worcestershire® sauce

1 can (4 oz.) tiny Vienna sausages

Directions

Boil potatoes until done or used canned potatoes. Drain

liquid. Stir in rest of ingredients. Heat until bubbly and serve.

For a large servings, (8-10) increase amount of Vienna sausages and

add another can of cream of mushroom soup.

Another version of this recipe is to combine all ingredients with the

exception of

potatoes. Serve hot over mashed potatoes or over toast or hot

biscuits.
