Serves: 18 Serving Size: 1/4 cup Ingredients 1/2 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 8 large eggs 1 1/2 cups cheddar cheesse, light, shredded 1 cup monterey jack cheese, shredded 1 1/2 cups cottage cheese (1%) 2 tablespoons diced jalapeno peppers 1 red pepper, diced 24 black olives, sliced
Preparation - Preheat oven to 350 degrees F (180 degrees C). Lightly coat a 9x13-inch (3L) baking dish with cooking spray.
- In a mixing bowl, combine flour, baking powder, and salt.
- In a separate mixing bowl, beat eggs with an electric mixer on high. Gradually stir flour mixture into eggs; beat until well combined. Fold in grated cheeses, cottage cheese, peppers, and olives.
- Pour into prepared baking dish and bake for 40 to 45 minutes, until set. Remove from oven and let cool slightly.
- Cut into 36 squares and serve warm.
