Serves: 1 Ingredients 2 slices 100% whole wheat bread 1 teaspoon light mayonnaise 1/4 cup avocado, sliced 1 tomato, sliced 1 cup ready-to-serve raw spinach 1/4 cup sliced red onion
Preparation - Toast bread and spread with mayonnaise. Place spinach leaves on one side and top with avocado, tomato and onion slices. Place the other slice of bread on top and enjoy.
