  Serves: 4   Ingredients   6 cups romaine lettuce  2 1/2 cups cooked macaroni  1/2 cucumber, sliced or chopped  1 large ripe tomato, cored and diced  3/4 cup skinless baked chicken breast, cubed  1 tablespoon olive oil  3 tablespoons red wine vinegar  1/4 teaspoon black pepper, to taste
   Preparation   - Assemble the ingredients for the salad (lettuce through chicken) in a large salad bowl in the order in which they appear with lettuce on the bottom. Cover; refrigerate until ready to serve, up to one day.  
 - When ready to serve, sprinkle with oil, vinegar and black pepper; toss well. Serve immediately.
