Mexican Beef Stir Fry

Yield: 6 servings

1 Tbsp canola oil
1 1/2 lb lean sirloin steak, cut into 3-inch strips,
trimmed of all fat
3 garlic cloves, minced
1 medium onion, minced
1 small red pepper, cut into thin strips
2 tsp chili powder
2 Tbsp lime juice
1 tsp cumin

In a wok over medium-high heat, heat the oil. Add thebeef and saute until the beef loses its pinkness.Drain any accumulated fat. Remove the beef from the wok. Add the garlic and onions and saute for 5 minutes.Add the red pepper and saute for 5 more minutes. Add the chili powder and lime juice to coat the vegetables. Add the beef back to the skillet and add the cumin. Heat 1 more minute.
