Cajun Pork Salad (Serves 2) 1/2 pound boneless pork loin
3/4 tablespoon vegetable oil
1 teaspoon Cajun seasoning (more or less to taste)
1 teaspoon lime juice
8-oz. bagged mixed baby greens
Slice pork as thin as you can get it. Heat the oil in a large skillet or wok on medium-high heat. Add pork and stir-fry strips until they are almost done. Add Cajun seasoning and lime juice and continue to cook until strips are cooked through. Remove from skillet and allow pork strips to cool slightly while you plate up greens. Top salad with pork strips.
