In large saucepan, blend sugar, cornstarch, cinnamon, nutmeg and salt.  Stir in 10 cups of water; cook and stir until thick and bubbly.  Add lemon juice and food coloring.  Pack apples into jars, leaving 1/2�?headspace.  Use spatula to distribute syrup.  Process pints for 15 minutes and quarts for 20 minutes at 10 lbs pressure, or 8 minutes at 5 lbs. pressure.  Or, bake at 400* for 50 minutes.
