Vegetarian Roll Ingredients 1 sheet puff pastry �?1 420g can red kidney beans, drained, washed and mashed �?1/2 440g can corn kernels, drained �?1 medium carrot, finely chopped �?1/4 red capsicum, finely chopped �?3 tbsp tomato paste �?1 packet taco seasoning �?1/4 cup cheddar cheese, grated �?Sunflower kernels �?1/4 cup milk Procedure Vegetarian Roll Pre-heat oven to 180oC. Prepare oven baking try by greasing or using a sheet of oven baking paper. Microwave finely chopped carrot in a little water for 3 minutes. Drain carrot and add to a mixing bowl with mashed red kidney beans, drained corn kernels and capsicum. Add tomato paste, and taco seasoning and combine well. Place pastry sheet onto the prepared oven tray. Spoon on red kidney bean mixture to form a sausage shape, running right along the sheet about 1/3 of the way in from 1 edge and about 10cm wide. Sprinkle the top of the red kidney bean sausage shape with grated cheese. Fold the pastry sheet over the top of the mixture to form a sausage roll shape. Brush the top with milk then sprinkle on sunflower kernels. Bake in a moderate oven for 35 minutes or until golden brown. Serving Information |
