Title: Hearty Vegetable Soup Categories: Soups Yield: 1 servings 1 ea large meaty beef bone 1/2 c raw rice 2 ea medium potatoes, sliced 2 ea carrots, sliced 1 ea small onion, sliced 1 c green beans, chopped 1 c celery, chopped 1/2 c cabbage, chopped 1/2 c green peas Boil beef in 8 cups of water until the meat falls off the bone. Remove the bone and meat. Add rice and boil for 15 minutes, then add remaining ingredients and continue boiling until the vegetables are tender but not mushy -- about 20 minutes. Cut the meat into bite-size pieces and return them to the soup.
