Yield: 1 servings
2 c diced potatoes
3 c water
2 t butter
1 qt milk
1 ea onion
1 x salt and pepper
Cook potatoes in salted water until tender. Drain but save the
water.
Mash potatoes fine. Add scalding hot milk, butter, and potato
water to potatoes.
Grate the onion and put in soup tureen, pour the hot soup
over it.
